The Culinary Institute of America (CIA) has been setting the standard for excellence in professional culinary education since its founding in 1946. Excellence, leadership, professionalism, ethics, and respect for diversity are the core values that guide our efforts.

The CIA's Archives and Special Collections, housed in the Conrad N. Hilton Library, collects materials related to culinary and food history. In service of the college's mission - to provide the world's best professional culinary education - the Archives inspires the study of historical materials and primary sources to further culinary education and research. Appointments are required for researchers and visitors the Archives.
