Salem's 1880 treatise, Beer, its History and its Economic Value as a National Beverage , in which Salem, responding to the growing temperance movement, argues that beer was a preferable alternative to hard liquor that brewers were, in fact, the "real, though perhaps unconscious, promoters of the great and glorious cause of genuine temperance."
